My husband and I have been interested in plant-based eating since 2012. It wasn’t until 2016 or so that we discovered Dr. Esselstyn’s research regarding no-oil, plant-based eating for heart disease, and intrigued by the fact that his research that was initially motivated by cancer prevention.
It can be a challenge at first, especially when nearly every product you buy has added oil and sugar, but we’ve gotten into a groove with it and plan ahead so we always have our heart-healthy options available. We even maintain our food choices when we travel, which can be a scavenger hunt- but a worthwhile one!
