Sugar-Free Chewy Gingerbread Spice Cookies

These Gingerbread cookies are incredible. The perfect cookie when you want something comforting, and special enough to feel like a celebratory treat.

These are based on my Chewy Gingerbread Spice Cookies, but without sugar and using less ginger so it wouldn’t become overpowering.

You could roll them into balls and press softly with a glass or mug to get the original gingersnap look, but I prefer to just drop them onto the pan for quicker baking and cleanup.

I honestly thought my daughters wouldn’t enjoy these much without the sugar, but my youngest asked for more and more- she’s truly a fan, and I think you will be too.

Sugar-Free Chewy Gingerbread Cookies

A holiday classic, these gingerbread spice cookies are delicious and completely guilt-free. Perfect for Esselstyn diet needs.

  • Preheat oven to 325˚.
  • Sir flour and spices in a medium bowl and set aside.
  • In a separate, larger bowl mix in applesauce, then mix in molasses.
  • Slowly add flour mixture and baking soda mixture and mix well.
  • Line 2 baking sheets with parchment paper or silipat liners. Spoon dough onto baking sheets in teaspoon-sized drops, about 20-24 in all.
  • Bake for 20 minutes, or until no longer soft in the center. Remove from baking sheets to cool.

    The ingredient list does not contain brown sugar but the instruction says to add the brown sugar…how much brown sugar??

      Thank you for catching this! I’ve edited the recipe- there is no sugar in this recipe… I had copied the instructions from my Chewy Gingerbread Spice Cookies which DO have sugar: https://crystalsrecipes.com/chewy-gingerbread-spice-cookies/ and forgot to omit that line. I created these above to see if I could make a good cookie with no sugar and no oil, and I love them! I hope you enjoy them too.

    Love these cookies! They are perfect when I’m craving a treat but don’t want something overly sweet. I’ve tried using mashed banana instead of the applesauce which was also delicious!
