Fudgy Black Bean Brownies- Gluten Free, Oil Free, Vegan

Oh. My. Gosh.

When I need a chocolate fix, these are my absolute favorite.

No flour. No oil. Just pure delicious.

Want to know a secret? Sometimes I use pinto beans instead, if that’s what I have in my fridge. They work just as well, because the cocoa powder permeates everything to make it deliciously dark.

Chia packs these with omega 3s. Beans infuse your beautiful body with protein and antioxidants. Cocoa… need I list the benefits of good chocolate? And just enough sugar to make it all wonderful. If you’re sensitive to sugar, as I am sometimes after I’ve been eating less of it for awhile, you can try 1/4 cup instead. Sometimes, I’ll use 1/4 cup of sugar and then sprinkle lightly with powdered sugar on top, which makes them beautiful AND sweet.

Does it get any better than this?

Black Bean Brownies- Gluten Free, Oil Free, Vegan

Cook Time: 25 minutes
Refrigerate: 1 hour

Instructions

  • Preheat oven to 350°
  • Lightly spray a 9x9" baking pan with oil- just enough to prevent the batter from sticking.
  • Add all ingredients to Vitamix, except chocolate chips. Blend well, adding a tiny stream of water to allow it to mix better, if needed. 
  • Pour into prepared baking pan, top with chocolate chips if desired. 
  • Bake 22-27 minutes, or until sides separate from the pan. 
  • Let cool 30 minutes before serving.
