Parsley Salad – Vegan, Oil-Free

I’ve been making this over and over since my daughter loves it- and it can be hard to get the young ones to unabashedly eat dark greens! It’s delicious and goes well alone or on top of a traditional salad, sandwich, or soup.

Flat-leaf parsley is more popular than curly, but they’re both delicious. You can also add 2-3 chopped roma tomatoes, but since my kids pick them out, I just make it without them. If you make this, I’d love to know what you think in the comments below!

Ingredients

  • 2-3 Roma tomatoes, diced optional
  • 1 bunch flat-leaf parsley, chopped
  • 1/2 red onion, diced
  • 1 large cucumber, diced
  • juice of 1 lemon

Instructions

  • Combine all ingredients, stirring well to ensure the lemon juice coats well.
  • Serve immediately, keeps 2-3 days if covered in the fridge.
