Vegan Ice Cream

This is one of our favorite after-dinner treats. We have added all kinds of fruit to the mix- and even eaten it without any other fruit but the banana base. Excellent with a bit of vanilla, or substitute with a bit of maple syrup or maple syrup flavoring for a completely different kick.

This mixes much better if the bananas are thawed for a few minutes before blending, so take your bananas out of the freezer 15-20 minutes before you want your dessert.

Ingredients

  • 4 frozen bananas
  • 1 tsp vanilla
  • 1 cup raspberries or cherries, blueberries, blackberries
  • 1 tbsp goji berries or dried cranberries, to top
  • 1/2 cup water to mix

Instructions

  • Let bananas sit for 10 minutes after removing from freezer. Break into smaller chunks and put in Vitamix or other high-speed blender.
  • Blend on low until large chunks are blended. Add water a little at a time, as needed. 
  • Add berries and vanilla, blend until smooth.
  • Spoon into cups, add goji berries to top.
